Chicken Pot Pie with Cheddar-Scallion Biscuit Topping
A wonderfully comforting variation on a classic dish. Unbaked, this can be tightly wrapped in foil and frozen for up to 3 months. Just defrost in the refrigerator overnight and bake as directed.
Butternut squash replaces potatoes for a kick of color, and sweetness.
Miniaturize them in crème brule’ ramekins and you have the perfect brunch party dish!

Sweet Potato, Beet & Fennel Galettes with Chevre & Thyme
This show stopping savory tart in hues of orange and magenta is the perfect cure for the winter blues. Served warm with a fresh garden salad with balsamic or Dijon vinaigrette makes this a very easy, fancy dinner.
An inexpensive Mandoline makes short work of slicing the fennel into paper-thin shavings, and if you’ve never used one before you may find it a most valuable gadget. Just be sure to find one with a pusher to protect your fingers!
